Easy Recipes to Try at Home

There are many great recipes found online, or on food channels that are actually very hard to carry out at home. I have constantly followed recipes online step by step, yet found the results not as intriguing as the actual image online. This common issue really annoys me, and as a result, I have compiled two EASY recipes that are very delicious and satisfying to make.

1. Simple Poached Egg Avocado Toast

This is a very easy breakfast that could be made in about 10 minutes, or less! This is a very filling, delicious breakfast that only allows you to start off your day happy and satisfied.

To make this you will need:

  • 2 eggs
  • 2 slices whole grain bread
  • 1/3 avocado (usually I cut it in half but don’t use all of it… okay fine maybe I do.)
  • 2 tablespoons shaved Parmesan cheese
  • salt and pepper for topping
  • fresh herbs (parsley, thyme, or basil) for topping

Instructions:

  • Bring a pot of water to boil, making sure that you have enough water to cover the eggs when they are placed inside.  
  • Drop metal rims of two mason jar lids into the pot so they are laying flat on the bottom.
  • When the water is boiling, turn off the heat and carefully crack the eggs directly into each rim. Cover the pot and poach for 5 minutes (4 for super soft, 4:30 for soft, 5 or more for semi-soft yolks).
  • While the eggs are cooking, toast the bread and smash the avocado on each piece of toast.
  • When the eggs are done, use a spatula to lift the eggs out of the water. Gently pull the rim off of the eggs and place the poached eggs on top of the toast.
  • Sprinkle with Parmesan cheese, salt, pepper, and fresh herbs.

2. Chicken Burritos

To make this you will need:

  • 2 cups cooked shredded chicken
  • ½ cup Mexican cheese blend ( or mozzarella)
  • 1 diced avocado
  • 2 tablespoons chopped cilantro
  • 4 large tortillas
  • 1 tablespoon of oil

Instructions:

  1. Mix the shredded chicken, cheese, cilantro, and the diced avocados.
  2. Lay a tortilla flat on a plate and add ¼ of the mixture.
  3. Roll the tortilla, and repeat this for the other tortillas.
  4. Pour 1 tablespoon of oil into a heated pan. Place all four tortillas on the pan and cook for 2 minutes on medium. This will help melt the cheese, and make your burritos even more delicious! Flip on the other side and cook for another minutes or until the the burritos are golden in color.
  5. Serve warm.

This easy recipe can serve as an easy lunch, where you wouldn’t have to put much effort into making a great meal. You can serve this with some tortilla chips, and a salad of your choice to make this much better.
